I can’t believe summer is almost over already! I’m a little sad to lose all this sunshine but I am pretty excited for fires in the wood stove and cozy sweaters. That’s my favorite!
Anyways, recently (well maybe a few weeks ago…) we harvested all the peaches from our little peach tree. This year we got about 40 pounds of peaches off the tree to enjoy. Oh my GOODNESS! Nothing like a fresh peach right off the tree. Store bought peaches have nothing on these!
Now we ate A LOT of peaches fresh but there were way too many to eat before they would go bad so I decided to freeze some of them and tuck them away in the freezer to enjoy a peach cobbler during those cold winter months.
You start off with some fresh peaches. If they aren’t quite ripe yet, lay them out in a single layer until they ripen up a bit. I did that with some of ours and it worked out great.
Wash all the peaches and then set them aside.
Next up get a large pot of water boiling on the stove and a large bowl with ice water in it. It’s time to blanche the peaches and get all of the peels off!
When the water has started to boil, add the peaches in batches and boil for about 1 minute. Remove the peaches and place in the ice water bath to cool and keep them from cooking.
Once all the peaches have been blanched remove all of the peels, pits and yucky spots. Slice the peaches, if desired, and then place peeled peaches into a large bowl of cool water that has 2 Tablespoons of sea salt dissolved in it.
After all of the peaches are prepped for freezing drain off all the salt water. Add the sliced peaches into zip top freezer bags or freezer containers. Label and then freeze until ready to use. I like to measure the peaches in 8 cup portions because that’s the amount I need for peach cobbler. 😛

Freezing Fresh Peaches

Start with fresh, ripe peaches. Wash the peaches and set aside.

Next you'll want to blanche the peaches. Bring a large pot of water up to a rolling boil. Add peaches into the boiling water for ~1 minute. Remove them from the boiling water and place in an ice water bath to stop them from cooking.

Once all of the peaches have been blanched remove all of the skin, pits, and any bad spots. Slice into desired size and then place the peeled peaches into a cool water bath with 2 T of sea salt dissolved in it. This will prevent browning.

Drain the peaches well and then put all of the peaches into zip top freezer bags. Label and lay them flat. Freeze until ready to use.
