Homemade Vanilla Ice Cream

Summer is here! I type that as I look outside at a cloudy 70 degree day but still we’re in July so it’s time for summer eats and treats. 🙂

I have been making homemade ice cream for quite some time and we have it all year around but this….

THIS is the best ice cream we have ever had. I’ve experimented with a lot of different recipes but this is the one I came up with that tops them all. So many people compliment how good it is that I just had to share it with you all.

You start off by whisking eggs in a large mixing bowl. You’ll want to whisk them until they are light in color and slightly foamy. Maybe takes a couple minutes.

Then add in your sugar a little bit at a time. I like using 1 cup of sugar but I used to make it with 3/4 c and it still turned out sweet. I have also used coconut sugar and it works well in this recipe too. It almost gives it a caramel flavor. Once all the sugar has been added you should have a smooth and thick mixture that is kind of like condensed milk.

Now you’ll add in the remaining ingredients. I will say the type of cream you use will make a difference. I LOVE the cream I get from Costco which is Darigold brand and it is 40% fat. I’ve used other heavy creams and they just don’t yield as creamy of a result.

Mix all the ingredients thoroughly and then pour it in your ice cream maker. This recipe works for whatever ice cream maker you’ve got. I’ve made it in one of the ice cream makers that you add ice and salt around the ice cream but I really enjoy making it in my Kitchen Aid ice cream maker. I was given this and I use it all the time!

In the Kitchen Aid you just add on this little piece where you would normally attach the dough hook or paddle attachments.

Then you add the frozen bowl and the plastic paddle. You lift the bowl up and then pour in your ice cream mixture. Turn it on low. I usually leave mine on stir or one more but you don’t need it going around crazy fast.

Next is just letting the ice cream maker do its thang while you go about whatever. I usually have a load of laundry to fold… You’ll know it’s done when it looks something like this. Mine usually takes about 20 minutes.

Then you’ll use a spatula to scrape every last drop of the delicious ice cream into a storage container. I’ve got this old potato salad container that we ended up with from a potluck and it’s just the perfect size and shape. Freeze the ice cream until it sets up, which usually takes about 8 hours.

Then dig in and enjoy!

Vanilla Ice Cream

Ingredients

  • 2 eggs
  • 3/4-1 cup sugar white or coconut sugar work well
  • 2 cups heavy whipping cream
  • 1 cup whole milk
  • 1 Tbspn vanilla extract
  • 1/4 tsp salt

Instructions

  1. In a large mixing bowl whisk 2 eggs until foamy and light.

  2. Add in sugar 1/4 cup at a time until all of the sugar is dissolved and you have a smooth and thick mixture.

  3. Add in the cream, milk, vanilla, and salt. Mix thoroughly.

  4. Pour ice cream mixture into your ice cream maker and follow the directions for your ice cream maker.

    Absolutely the BEST vanilla ice cream I have ever had! Please please please do a recipe for your rhubarb sauce! It it like heaven when you put it over this ice cream!
