Strain off the water kefir from the water kefir grains and set aside.
In a blender combine the ginger, lemon juice, and water. Blend until the ginger has broken down into small pieces. Pour the ginger water mixture through some cheese cloth to remove the chunks of ginger.
Add the ginger water to your water kefir and then add in the sugar and stir until the sugar has dissolved.
Pour the ginger ale into bottles or a mason jar and cover with a lid. Let stand at room temperature for 24 hours. Chill in the fridge for about 2 hours or pour over ice to enjoy.
