In a quart size mason jar, mix together brown sugar and water. Stir until the sugar has dissolved.
Add in the kefir grains. Stir gently and then cover loosely with a mason jar lid or a tea towel. Depending on how warm your house is it can take anywhere from 2-5 days to finish fermenting. This summer our house has averaged 70-72 degrees and I usually let it go about 3 days.
