Fried Pork Chops & Gravy

Crispy, fried pork chops and optional country gravy.

Ingredients

  • 5 pork chops
  • 1 c flour
  • 1 t salt
  • 1 t thyme
  • 1 t ground mustard
  • 1/2 t garlic powder
  • 1/2 t oregano
  • 1/2 t basil
  • 1/2 t paprika
  • 1/2 t ginger
  • 2 eggs
  • 1/2 c buttermilk
  • 2 c breadcrumbs
  • 1 t salt
  • 1/2 t pepper
  • 1 t onion powder

Instructions

  1. In a large container combine flour, salt, thyme, mustard, garlic powder, oregano, basil, paprika, and ginger. Mix until spices are well distributed in the flour. Set aside. In a small bowl combine buttermilk and eggs. Whisk together and set aside. In another large container combine breadcrumbs, salt, pepper, and onion powder. Stir and set aside.

  2. In a large cast iron skillet heat 1/3 cup of oil (coconut oil, avocado oil, and even bacon grease works) over medium heat.
  3. Coat pork chops in flour mixture then dip into egg mixture and then coat with breadcrumbs. Don't discard remaining flour mixture, it can be used for gravy.
  4. Once oil is hot put pork chops in and lower the heat to medium low. Cook until the first side is golden brown, about 4 minutes. Flip and cook until internal temp reaches 170 and the second side is golden. Remove from pan to a plate to serve.
