Dark Chocolate Zucchini Bread

Today’s recipe all happened because I started a subscription to Imperfect Foods! I really don’t like going grocery shopping and so I try to only grocery shop 2 times a month. Well it’s kinda hard to keep produce fresh from one shop to the next so when I found out that Imperfect was serving my area I just had to try it out. I love it! I’m no longer spending the time and gas money to go to the store just to get a few produce items and I’m also choosing some things that I don’t normally buy because when I’m at the store I just grab the same things and get the heck out of there!

You could probably guess that I got some zucchini in my last box and so I just had to make some zucchini bread! I originally was just going to put some chocolate chips in it but then I saw the dark chocolate cocoa powder and thought why not make it double the chocolate?!

Dark chocolate just always tastes so good to me! It feels like I’m indulging but I also don’t feel quite as guilty when I have a treat made of it. I mean, I’ve heard it’s good for you right?

You start by melting some butter, preheating the oven, and preparing a loaf pan… All that boring prep work and stuff.

Next you get to the good fun stuff! Grab a large bowl and combine the flour, cocoa powder, baking soda, and sea salt.

In a separate bowl, combine the eggs, sugars, vanilla, and zucchini.

Next up add all your dry ingredients to the wet and stir just a little to moisten things up a bit. Then add in the melted butter.

Stir just a bit more and then add in your chocolate chips. Stir until no streaks of dry ingredients remain.

Pour the batter into the prepared loaf pan and then bake in the oven for about an hour. It’s done when a toothpick (or skewer in my case) comes out clean when poked in the center of the loaf.

Let the bread cool for 5 minutes in the loaf pan before turning out onto a cooling rack. This bread is so good when you can enjoy it warm with all those melty chocolate chips throughout!

Dark Chocolate Zucchini Bread

Ingredients

  • 1/2 cup melted salted butter
  • 1 cup flour
  • 1/2 cup dark chocolate cocoa powder you can use regular cocoa powder as well
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 2 large eggs
  • 1/2 cup white sugar
  • 1/4 cup coconut sugar brown sugar can used used instead
  • 1 tsp vanilla extract
  • 1 1/4 cup grated zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. In a microwave safe bowl, melt a stick of butter and then set aside to cool slightly.

  2. Preheat the oven to 325F and prepare a large loaf pan by spraying with nonstick cooking spray or buttering and flouring the inside.

  3. In a large mixing bowl, combine the flour, cocoa powder, baking soda, and sea salt. Set aside.

  4. In another bowl, combine the eggs, both of the sugars, vanilla, and grated zucchini.

  5. Pour the dry ingredients into the wet ingredients and start to mix. After you have mixed slightly add in the melted butter. Stir until almost no streaks of dry ingredients remain.

  6. Add in the chocolate chips and mix until all of the dry ingredients have been incorporated. Try not to over mix!

  7. Pour the batter into the prepared loaf pan and bake the bread for about 1 hour or until a toothpick inserted in the center comes out clean. After the bread is finished baking remove from the oven and let cool in the pan for 5 minutes before removing to a cooling rack. Store at room temp in plastic wrap or an airtight container for up to 3 days.
