Healthy No Bake Cookies

There are so many things I associate with summer but no bake cookies (anything no bake really) are one of the top things I look forward to making more of in the summer.

Sure, you can make no bake desserts any time of year but I tend to make them more in the summer when I’m trying to avoid using the oven!

I started to make these cookies recently because I am following the GAPS diet to see if it will help with gut/acid reflux issues. With the GAPS diet you can’t have any refined sugar, which isn’t too hard to give up in my opinion. It’s the bread that is hard to give up! Oh how I miss bread… You are allowed raw honey, though, so these cookies are on the up and up! Woohoo!

These cookies are so simple to make and it’s a one bowl recipe. You start off with a mixing bowl and you add in the peanut butter, coconut oil, and honey. Mix until everything is thoroughly combined then set it aside.

Next up you’ll need to do some chopping. Today I am using dates, walnuts, and almonds. This recipe is nice as far as how much flexibility you have with your add-ins. You could use pecans, raisins, craisins, dried apricots…. You have a lot of wiggle room here!

Once you have everything chopped to your desired size, add it into the peanut butter mixture along with the coconut flakes. Stir thoroughly.

Now you just need to scoop them out onto a parchment paper lined cookie sheet to set up. I used a mini scoop but you could use a couple of spoons and get the same job done. Once you’ve got the cookies dolloped on the cookie sheet place them in the freezer for at least 30 minutes.

After the cookies are set up remove them from the cookie sheet and place in an airtight container. I like to store mine in the freezer but you can store them in the fridge if you want to. They will be a bit softer and once you take them out of the fridge you’ll want to eat them up quick or you’ll end up with a gooey mess. Just store them in the freezer. 🙂

Healthy No Bake Cookies

Servings 14 cookies

Ingredients

  • 1/2 cup natural peanut butter like homemade or Adam's
  • 3 Tbspn melted coconut oil
  • 1/3 cup honey
  • 1/3 cup chopped walnuts
  • 1/3 cup chopped almonds
  • 1/3 cup chopped dates or raisins
  • 2/3 cup unsweetened shredded coconut

Instructions

  1. In a large bowl combine peanut butter, coconut oil, and honey until well combined.

  2. Add in remaining ingredients to the peanut butter mixture. Stir until everything is thoroughly incorporated.

  3. Scoop cookie mixture into cookie size portions (about 2 Tbspn) onto a parchment paper lined cookie sheet. Place the cookies in the freezer for 30 min.

  4. After the 30 min. place the cookies in an airtight container and store in the freezer. You can also store in the fridge but they will be on the meltier side. The texture is great straight from the freezer.
