Grilled Chicken

Summer is in full swing! Well it should be anyway… This year in the Willamette Valley we’ve barely had a week’s worth of 80-90 degree days. It’s rained quite a bit as well this summer and it’s mid-July! Such a weird weather year…

ANYWAYS, even though it isn’t the typical weather around here, we are still doing the normal summer activities and eating the same summer recipes. Today’s recipe is one of my go-to recipes for the summer. I came up with this marinade a couple years and I can’t bring myself to try anything else out. It’s just so good!

You start by adding chicken, lemon juice, worcestershire, olive oil, garlic, and some seasonings to a gallon size zip loc bag. Place it in the fridge for about 3 hours. Today I used whole chicken breasts (mostly to save time) and we just cut them up when it’s time to serve it up but you can definitely cut the chicken into smaller pieces. I do that if we have a large crowd.

Once the chicken has been marinating for a while, remove it from the fridge and tenderize it using a meat mallet. I like to get the breasts an even thickness throughout. Usually about an inch thick.

Heat the grill up to 400 degrees and then place the chicken on the grill. Sear on both sides. After both sides have been seared, turn the heat down to low and insert a meat thermometer in the center of one of the chicken breasts. Keep cooking until the chicken reaches 165 degrees.

Once the chicken is finished cooking remove it from the grill and let it rest for 10 minutes and then serve!

Ingredients

  • 2-4 chicken breasts
  • 1/3 c lemon juice
  • 1 T worcestershire sauce
  • 1/4 c olive oil
  • 1 t minced garlic
  • 1 t onion powder
  • 1 t sea salt
  • 1/4 t pepper

Instructions

  1. In a gallon size zip loc bag, add in all of the ingredients. Place in the fridge for at least 3 hours.

  2. After the chicken has marinated remove from the fridge and using a meat mallet tenderize the chicken until each breast is the same thickness throughout.

  3. Heat the grill on high to about 400 degrees.

  4. Place the chicken breasts on the grill and sear both sides. ~3-4 minutes per side.

  5. Place a meat thermometer in the center of one of the breasts and turn the heat down to low. Cook until the chicken has reached 165 degrees, turning if necessary to keep from burning.

  6. Once the chicken has finished cooking, remove from the grill and let rest for 10 minutes and then serve.
