One Pot Chicken Tomato Pasta

Some nights are just crazy. You ever have one of those days where you have a million and one things on your to do list and you only managed to get one of them done and yet you feel totally zapped by the end of the day? I had one of those the other day and by about 4:30 I realized I should probably figure out something for dinner and I decided on this chicken tomato pasta. This is one of the dinners I make when I want something quick to make and quick to clean up. I actually don’t mind spending a ton of time on dinner, even when I am tired, but I absolutely hate to have a huge mess to clean up when I’m tired. So this recipe is just perfect for nights when I want something that tastes great but I can clean it up in about 10 minutes!

I feel like I’m forgetting something putting this post together and I only have 3 photos but it’s just that easy. 🙂

Start out with the chicken and italian dressing. Saute until just done and then add in everything else except the cheese.

Cover and turn down to low. Simmer until pasta is tender, stirring every couple of minutes or so to prevent sticking.

Remove from heat and add the cheese. That’s it!

One Pot Chicken Tomato Pasta

Quick and easy weeknight dinner!

Ingredients

  • 2 chicken breasts cut into bite sized pieces
  • 2 T italian salad dressing
  • 8 oz rotini pasta
  • 1 15 oz can of crushed or diced tomatoes
  • 1 6 oz can of tomato paste
  • 1 8 oz can of tomato sauce
  • 1 t basil
  • 1 t oregano
  • 1 t thyme
  • 1 t sea salt
  • 1/2 t garlic powder
  • 1 t onion powder
  • 2 T brown sugar or honey
  • pinch of cayenne
  • 2 c water
  • 1 c shredded sharp cheddar cheese

Instructions

  1. In a large pot over medium high heat, add chicken and Italian dressing. Cook until just done.

  2. Add tomatoes, sauce, paste, pasta, water, and spices/herbs.

  3. Bring to a boil and then cover and turn down to low. Stir every 2 minutes or so to prevent sticking. Simmer for about 15 minutes or until pasta is tender.

  4. Remove from heat and stir in cheese. Let stand for 5 minutes and then serve.
