Fried Pork Chops + Gravy Recipe

Yesterday was me and my husband’s wedding anniversary. We celebrated 9 years! Neither of us are super romantic but we both love food so I wanted to make something special. I had pork chops in the freezer and I knew exactly what to make with them. Fried pork chops!

I came up with this recipe about 6 months ago and it is now my favorite way to prepare pork chops. They come out so moist on the inside and crispy crunchy on the outside.

The key is coating the pork chops in flour, then egg/buttermilk, and then breadcrumbs (I make my own breadcrumbs but you can use store bought.) I never have trouble with the coating falling off when I do it this way. It takes a little more prep work but the cooking time is actually pretty fast.

After you get the chops fried you will definitely want to make some homemade country-style gravy. This gravy is perfect over mashed potatoes and the pork chops as well and since you already have all the yummy flavor in the skillet why not use it to make gravy?

All the seasonings from the pork chops end up in the gravy and the result is such an amazing flavor!

Fried Pork Chops & Gravy

Crispy, fried pork chops and optional country gravy.

Ingredients

  • 5 pork chops
  • 1 c flour
  • 1 t salt
  • 1 t thyme
  • 1 t ground mustard
  • 1/2 t garlic powder
  • 1/2 t oregano
  • 1/2 t basil
  • 1/2 t paprika
  • 1/2 t ginger
  • 2 eggs
  • 1/2 c buttermilk
  • 2 c breadcrumbs
  • 1 t salt
  • 1/2 t pepper
  • 1 t onion powder

Instructions

  1. In a large container combine flour, salt, thyme, mustard, garlic powder, oregano, basil, paprika, and ginger. Mix until spices are well distributed in the flour. Set aside. In a small bowl combine buttermilk and eggs. Whisk together and set aside. In another large container combine breadcrumbs, salt, pepper, and onion powder. Stir and set aside.

  2. In a large cast iron skillet heat 1/3 cup of oil (coconut oil, avocado oil, and even bacon grease works) over medium heat.
  3. Coat pork chops in flour mixture then dip into egg mixture and then coat with breadcrumbs. Don't discard remaining flour mixture, it can be used for gravy.
  4. Once oil is hot put pork chops in and lower the heat to medium low. Cook until the first side is golden brown, about 4 minutes. Flip and cook until internal temp reaches 170 and the second side is golden. Remove from pan to a plate to serve.

Homemade Gravy

Creamy country gravy.

Ingredients

  • 1/4 c oil coconut, avocado, bacon grease
  • 1/4 c seasoned flour mixture
  • 1 c milk
  • 1/4 c cream
  • salt and pepper to taste

Instructions

  1. Heat oil over medium heat.

  2. Add in seasoned flour and whisk until combined and bubbly.
  3. Add in milk and cream and whisk until thick and bubbly.
  4. Remove from heat. Salt and pepper to taste.
