I never have been much of a coffee drinker. Honestly, it never set well with me and I never really felt the need to have a caffeinated beverage. That was until our youngest was born. Oh boy! Having to run after our busy older daughter and then being sleep deprived from a newborn I felt the need. The need for caffeine!
So I had heard about this cold brew coffee. All the coffee drinkers raved about it. How it’s supposed to be easier on the stomach and more smooth tasting so I gave it a try and it didn’t cause the heartburn I had experienced in the past from coffee. I became a total coffee drinker. Every single day I looked forward to that delicious pick-me-up.
Now that our youngest is no longer keeping me from sleep I don’t drink coffee every day but I still like to have it once or twice a week. When I do indulge, this is the way I like to drink it.
I’m no expert on coffee and I have seen many different amounts of coffee grounds on cold brew recipes. This is just the concentration I like. It’s plenty strong enough for me but it may be weak to a regular coffee drinker. Adjust the amounts to your liking.
Cold Brew Coffee
1/2 cup of ground coffee
water
1 quart mason jar with lid
Pour coffee grounds into mason jar and fill the rest of the jar with water. Cover with a lid and shake it up. Place in the fridge overnight or atleast 8 hours. Pour coffee through a fine mesh strainer lined with paper towels to remove the coffee grounds. Rinse out the mason jar and then pour the filtered coffee back into the jar. Serve over ice and add water to desired strength. Store in the fridge for up to a week.

Recipe Notes
Note: This is a concentrate. You will need to dilute with water to get your desired strength. I usually go half water half coffee.
