In my quest to remove refined sugar from our diet I came up with this pudding sweetened only with honey. Part of the reason I don’t want to eat so much sugar is that it is so addictive. It takes so much effort to stop having it and if I slip up and have a dessert or something it’s like I crave it even more than I did before. I don’t like feeling dependent on it. Especially since it has no health benefits. …

Pumpkin Streussel Muffins
So in my last post I talked about the weather cooling down and today is the same story except it totally rained! It just makes me want to curl up in a blanket by the fire. But it’s not actually THAT cold. So my compromise? These pumpkin streussel muffins! …
Homemade Ricotta Cheese
I have recently started making my own ricotta cheese. I had no idea making your own cheese was so easy. I’ve seen some tutorials on mozarella and cream cheese that seem pretty darn easy but they do call for rennet, which I have never had on hand. When I found out I could make ricotta cheese with these simple ingredients that I ALWAYS have on hand I couldn’t wait to give it a try. …
Yogurt in the Instant Pot
So the instant pot… I’m totally into using my instant pot, especially with these hot days lately. I can make a whole meal in that thing and it doesn’t heat the house up one bit and when you don’t have air conditioning a few degrees is a big deal!
In between all these meals I’ve been making in it I like to make up a batch of yogurt. It’s a cool and healthy treat we enjoy around here. Sprinkle on some granola, fresh fruit, and a drizzle of honey and it makes for a perfect summer breakfast. …
Granola
Most mornings at our house breakfast is either eggs, oatmeal, or cereal. Except for Sundays, that is pancake day. 🙂 I think eggs and oatmeal are great wholesome options for breakfast. Cereal on the other hand… Well I have a love/hate relationship with the stuff. It’s nice for the convenience but we can go through a box in just a couple of breakfasts and I’m hungry again an hour after having it. Plus, most cereals are full of a bunch of sugar and they don’t come with a lot of nutrients. So I started searching for granola recipes and tweaking them and this is what I came up with. It makes a ton, its nice and crispy/crunchy, and I always have these ingredients on hand. It’s great with yogurt or just good ol’ milk. …
Homemade Peanut Butter
Peanut butter is a staple in our house. We go through it like crazy. A few years ago I realized how many “extra” ingredients were in normal peanut butter so I started buying Adam’s all natural peanut butter. Adam’s is fine but it can get pretty expensive when you go through it like we do so I started making our own and it turns out it is the best tasting peanut butter we’ve ever had AND it is very inexpensive! Win win! …
Tuna Patties
Okay so I never thought tuna patties would ever be something I would write a blog post on. Up until about 6 months ago I had never tried them and honestly it’s not exactly the kind of dish I thought anyone would really like. I tried out a recipe because I hand’t thawed out any meat for dinner one night (okay okay so that’s pretty much every night…) and they turned out pretty good so I made them again with some tweaking and they are now one of my go to dinners. Both of my girls love them and I think they are pretty tasty as well. …
Peanut Butter Chocolate Chip Granola Bites
I am a total snacker. I feel like I am almost always up for eating something… Especially something a little sweet after I’ve had a savory dish. I always like to end on a sweet note! Is anyone else like that? I could be completely satisfied with a meal but then I just feel the need to end my meal with something sweet. So that is where these peanut butter chocolate chip granola bites come into play! …
