There’s nothing like a plate of classic spaghetti. I forget about this simple, yet delicious meal. Everyone in the family loves it, it’s pretty cheap, and super easy to put together. It honestly should be a weekly meal around here.

Happy New Year everyone! I hope you all had a Merry Christmas and have had a great start to the new year. Obviously things have been different this holiday season but I’m determined to not let it get me down!
I’m starting the year off with a few goals and one of them is having a few (or maybe 10) quick and easy recipes that are made with staple items I almost always have on hand. After doing some very in-depth research (scrolling through Pinterest recipes) I’ve been able to figure out a few, which is nice when you have one of those busy days where you don’t feel like cooking but everyone is cranky and hungry and still needs to eat.

Hello everyone! Hope you all are staying safe and healthy. In Oregon (well at least in the Willamette Valley) the weather is making me go crazy. One day it’s gorgeous and you think the rain is finally over with for the season and then the next you get a super dreary rainy day.
Just when I think I’m done with cozy comfort foods until the summer is over we get hit with rain and wind and all I want to do is cuddle up with a warm bowl of soup and homemade bread.

One thing that can always bring me some cheer, even on a dreary day, is sourdough. Making sourdough recipes just makes me happy. There is more investment in a sourdough recipe and when you end up with something that tastes delicious it’s even more rewarding.

This is one of my favorite recipes from childhood. Funny thing is I had never actually made it! Until the last year or so I wasn’t a huge fan of cooking beef… I’m not talking about ground beef. It’s more of the steaks and roasts that I avoided. For some reason I was just intimidated by it! Not too long ago we purchased 1/4 of a cow and it came with a TON of steaks and roasts so I kinda had to put my fears aside and learn what to do with the different cuts. I have gotten a lot better at cooking/grilling steaks and most roasts I do fine with but I’m still working on my skills. 😀

The other day I bought a package of boneless skinless chicken thighs that were on sale. It was, of course, a huge package so I divided it up into 2 meals and put them away in the freezer and kind of forgot about them…
A couple weeks went by and I realized I hadn’t done anything with them so I started brainstorming what new creation I could come up with. I looked around on Pinterest for ideas but I just wasn’t seeing anything that caught my eye and so I just made this recipe up as I went and they turned out perfect!
