Summer has gone away it seems. Yesterday was 95 and today I don’t think it has even hit 70 degrees and it’s almost 3:00 pm. I’ve felt freezing all day! Which I am fine with because I’m not much of a summer cook. Does anyone else have a hard time cooking in different seasons? Yogurt in the Instant Pot
So the instant pot… I’m totally into using my instant pot, especially with these hot days lately. I can make a whole meal in that thing and it doesn’t heat the house up one bit and when you don’t have air conditioning a few degrees is a big deal!
In between all these meals I’ve been making in it I like to make up a batch of yogurt. It’s a cool and healthy treat we enjoy around here. Sprinkle on some granola, fresh fruit, and a drizzle of honey and it makes for a perfect summer breakfast. …
Granola
Most mornings at our house breakfast is either eggs, oatmeal, or cereal. Except for Sundays, that is pancake day. 🙂 I think eggs and oatmeal are great wholesome options for breakfast. Cereal on the other hand… Well I have a love/hate relationship with the stuff. It’s nice for the convenience but we can go through a box in just a couple of breakfasts and I’m hungry again an hour after having it. Plus, most cereals are full of a bunch of sugar and they don’t come with a lot of nutrients. So I started searching for granola recipes and tweaking them and this is what I came up with. It makes a ton, its nice and crispy/crunchy, and I always have these ingredients on hand. It’s great with yogurt or just good ol’ milk. …
