Yogurt in the Instant Pot

July 23, 2018 by Haley Leave a Comment

So the instant pot… I’m totally into using my instant pot, especially with these hot days lately. I can make a whole meal in that thing and it doesn’t heat the house up one bit and when you don’t have air conditioning a few degrees is a big deal!

In between all these meals I’ve been making in it I like to make up a batch of yogurt. It’s a cool and healthy treat we enjoy around here. Sprinkle on some granola, fresh fruit, and a drizzle of honey and it makes for a perfect summer breakfast. …

Granola

July 20, 2018 by Haley Leave a Comment

Most mornings at our house breakfast is either eggs, oatmeal, or cereal. Except for Sundays, that is pancake day. 🙂 I think eggs and oatmeal are great wholesome options for breakfast. Cereal on the other hand… Well I have a love/hate relationship with the stuff. It’s nice for the convenience but we can go through a box in just a couple of breakfasts and I’m hungry again an hour after having it. Plus, most cereals are full of a bunch of sugar and they don’t come with a lot of nutrients. So I started searching for granola recipes and tweaking them and this is what I came up with. It makes a ton, its nice and crispy/crunchy, and I always have these ingredients on hand. It’s great with yogurt or just good ol’ milk. …

Homemade Peanut Butter

July 20, 2018 by Haley 2 Comments

Peanut butter is a staple in our house. We go through it like crazy. A few years ago I realized how many “extra” ingredients were in normal peanut butter so I started buying Adam’s all natural peanut butter. Adam’s is fine but it can get pretty expensive when you go through it like we do so I started making our own and it turns out it is the best tasting peanut butter we’ve ever had AND it is very inexpensive! Win win! …

Homemade Buttermilk

July 20, 2018 by Haley Leave a Comment

I love using buttermilk in recipes. It makes some of the best biscuits and pancakes. I read an article some time ago that told how to make your own buttermilk so you would always have some on hand. I’ve been doing it this way ever since! You just have to make sure to always set aside ¼ cup of buttermilk for the next batch and you will never run out. …

Tuna Patties

July 5, 2018 by Haley Leave a Comment

Okay so I never thought tuna patties would ever be something I would write a blog post on. Up until about 6 months ago I had never tried them and honestly it’s not exactly the kind of dish I thought anyone would really like. I tried out a recipe because I hand’t thawed out any meat for dinner one night (okay okay so that’s pretty much every night…) and they turned out pretty good so I made them again with some tweaking and they are now one of my go to dinners. Both of my girls love them and I think they are pretty tasty as well. …

Peanut Butter Chocolate Chip Granola Bites

July 5, 2018 by Haley Leave a Comment

I am a total snacker. I feel like I am almost always up for eating something… Especially something a little sweet after I’ve had a savory dish. I always like to end on a sweet note! Is anyone else like that? I could be completely satisfied with a meal but then I just feel the need to end my meal with something sweet. So that is where these peanut butter chocolate chip granola bites come into play! …

Cheesy Mexican Casserole

June 21, 2018 by Haley Leave a Comment

Ahhhh casseroles. You either love ’em or you hate ’em. I totally love casseroles. I remember when my husband and I first got married and he told me, “Could you not put everything together all the time?” haha The good ‘ol days… We eventually figured out a good middle ground and I may have converted him to be a lover of casseroles. 🙂 …

Oven Roasted Whole Chicken

June 19, 2018 by Haley Leave a Comment

Roasting whole chickens is one of the easiest main dishes to make. The cook time is a bit long but there is so little prep that it’s one of my go-to’s. Most of the time I don’t even put whole chickens in the freezer (they are a hassle to thaw). I try to cook them within a day of buying them and we have chicken for dinner and then whatever is left I can shred up and use for another meal. …
