Happy New Year everyone! I hope you all had a Merry Christmas and have had a great start to the new year. Obviously things have been different this holiday season but I’m determined to not let it get me down!
I’m starting the year off with a few goals and one of them is having a few (or maybe 10) quick and easy recipes that are made with staple items I almost always have on hand. After doing some very in-depth research (scrolling through Pinterest recipes) I’ve been able to figure out a few, which is nice when you have one of those busy days where you don’t feel like cooking but everyone is cranky and hungry and still needs to eat.
I made this recipe a few months back and it came to mind yesterday and I realized it hits all the quick and easy meal points I need to add it to my list.
This is one of those dishes that just says comfort food! Must be eaten on a cold, blustery, winter day by a cozy fire… Okay maybe I shouldn’t go that far but it will definitely warm you up on one of those dreary days. Can you tell I’m ready for some sunshine? 🙂
I got the idea for this recipe from the blog Farmhouse on Boone. Check out her variation here! She made a one pan sourdough skillet on her blog and I just loved the idea. I combined it with a side dish my mom used to make growing up which consisted of green beans, ham or bacon, and potatoes and VOILA this dinner bake was born!
First you start by heating some oil in a large cast iron skillet and then add in your diced potatoes. Cook the potatoes until they are a little golden but more importantly, tender!
While the potatoes are frying up you can mix up your sourdough topping. In a large bowel… (ugggh! I did it again. This happens every time I type the word bowl) Ahem, in a large BOWL add in the starter, eggs, baking soda, butter, salt, and oregano. Whisk it on up and you got some tasty topping!
Now back to the potatoes. Once they are all nice and toasty and tender add in your ham and green beans.
Next up add in the onion powder, garlic powder, dried mustard powder, and salt and pepper. Mix it all up and sprinkle with the flour. Stir for about a minute to coat everything evenly then add in the half and half. Stir until it’s nice and thick.
Remove the pan from the heat and pour over the sourdough batter. Place the pan in the oven for about 20 minutes or until the topping is baked through.
Remove the pan from the oven and sprinkle with cheese. Place the pan back in the oven for an additional 5 minutes to get that cheese ooey gooey. Once your cheese is melted remove from oven and let stand for about 10 minutes and then serve!
You know I call this a dinner bake but honestly it could be a breakfast dish as well. Heck, it could even be served for lunch. It’s an anytime bake!
One Pan Sourdough Dinner Bake
Ingredients
Filling
- 2 Tbsp avocado oil can use vegetable or coconut oil in place of avocado oil if needed
- 1 cup diced potatoes
- 1 1/2 cups diced ham
- 3/4 cup frozen green beans
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/2 tsp dried mustard powder
- salt and pepper to taste
- 2 Tbsp flour
- 1/2 cup half and half milk will work as well
Sourdough Topping
- 1 1/2 cups fed sourdough starter
- 3 large eggs
- 1 tsp baking soda
- 3 Tbsp butter
- 1 tsp sea salt
- 1 dash dried oregano
- 1 1/2 cups shredded cheddar cheese
Instructions

Preheat oven to 375F

Heat a large cast iron skillet over medium heat. Add in the avocado oil and once the oil is hot add in the diced potatoes. Turn down the heat to low/medium heat and cover. Cook for 10-12 minutes stirring a couple of times during that time.

While the potatoes are cooking mix up your sourdough batter. In a large bowl add in the sourdough starter, eggs, baking soda, butter, salt, and oregano. Whisk together until combined and set aside.

Once the potatoes are tender and lightly golden brown add in the ham and green beans. Stir in the onion, garlic, and mustard powder. Salt and pepper to taste and then add in the flour. Stir for about a minute to evenly coat the filling. Pour in the half and half and stir until thick. Remove from heat.

Pour the sourdough batter over the top of the filling and place in your preheated oven. Bake for 20 minutes or until the topping is cooked through. Remove from oven and sprinkle the cheese over the top. Place the pan back in the oven and bake for an additional 5 minutes. Once the cheese is all gooey and melted remove from oven and let it rest for 10 minutes before serving.
