We are in another cold spell in our neck of the woods and so we just had to have a nice warm dessert to enjoy! Today’s recipe is one of my husband’s childhood favorites and a go-to for cold weather desserts.
I had never heard of teddy bears in the apple orchard before we met but I’m glad I know about it now. It’s simple ingredients, quick to put together, and just perfect to have in this cold weather.
I’m curious if anyone else have ever heard of this or maybe it was just a family recipe someone came up with. If you are like me and hadn’t heard of this, it’s just a moist gingerbread cake baked over applesauce. I can’t even find a similar recipe when I look on Pinterest!
So, to start this recipe you’ll pour 2 quarts of applesauce into a 9×13 pan and spread it evenly.
In the bowl of a mixer (or a large bowl and using a hand mixer) combine the flour, cinnamon, ginger, salt, cloves, and baking soda.
Next you will add in the molasses, butter, egg, and hot water to the dry ingredients. Mix until you have a smooth batter.
Pour the gingerbread over the applesauce and gently spread to make an even layer.
Bake for about 40 minutes or until a toothpick inserted in the center comes out clean. I ran out of toothpicks and decided to use a butter knife to check. It worked but I made a small hole in the middle so that’s what is going on there! 😀
Cool until it is just warm and then serve. It is delicious with vanilla ice cream. Refrigerate any leftovers. We like having ours in the morning with breakfast too.
Teddy Bears in the Apple Orchard
Soft gingerbread cake baked over applesauce.
Ingredients
- 2 quarts applesauce
- 2 1/2 c flour
- 1 t cinnamon
- 1 t ground ginger
- 1 t sea salt
- 1/2 t ground cloves
- 1 1/2 t baking soda
- 1 c molasses
- 1 stick butter melted
- 1 egg
- 1 c hot water
Instructions

Preheat oven to 350 and pour the applesauce into a 9×13 pan. Spread it evenly and then set aside.

In a large bowl combine all of the dry ingredients. Stir to combine.

Add all of the wet ingredients to the dry and mix on low speed (stand or hand mixer work) to combine everything. Turn mixer speed up to medium and mix for 3 minutes, occasionally scraping the sides of the bowl.

Pour the gingerbread batter over the applesauce and gently spread it evenly over the surface.

Bake for ~40 minutes or until a toothpick inserted in the center comes out clean. Cool until just warm and then serve. Refrigerate any leftovers.
