Some nights are just crazy. You ever have one of those days where you have a million and one things on your to do list and you only managed to get one of them done and yet you feel totally zapped by the end of the day? I had one of those the other day and by about 4:30 I realized I should probably figure out something for dinner and I decided on this chicken tomato pasta. This is one of the dinners I make when I want something quick to make and quick to clean up. I actually don’t mind spending a ton of time on dinner, even when I am tired, but I absolutely hate to have a huge mess to clean up when I’m tired. So this recipe is just perfect for nights when I want something that tastes great but I can clean it up in about 10 minutes! …

Quiche with Hash Brown Crust
I recently was going through some of my old recipes and I came across one that I had totally forgotten about. Quiche! I do like traditional quiche with a pie crust but I feel like it’s pretty rich and I’m never able to eat very much of it. Maybe that’s a good thing BUT one day I got to thinking of other options and I thought of doing a crust made with potatoes…
I really thought I was the first to think of such a thing but a quick search on Pinterest and I realized a lot of people had thought of it. 😀 I got some ideas on a method and I came up with this quiche recipe. …

Alright so we finished out week 2 with great success! Scarlett was battling a nasty cold last week so we took it pretty easy outside of school work but she wanted to do the usual routine so we went ahead with our normal schedule of things. With summer ending and the cooler months starting it could only mean one thing… Apple season! Okay, I guess it can mean a lot of things but apples are the first sign of Fall to me. Last week we cleaned up all the windfalls from under our big apple tree and we ended up with six 5 gallon buckets worth. We turned all of it into applesauce and apple butter and now we have a TON to enjoy throughout the next year. …

The school year is in full swing! Oh man I have been so excited to get started with homeschooling with our oldest daughter. Like most 4-year-olds, she is curious about everything and I love seeing her face light up when she learns something new.
I wanted to do a recap of our first week and share how everything went. So far the routine is going well and I’m just so excited to share everything! …

Fried Pork Chops + Gravy Recipe
Yesterday was me and my husband’s wedding anniversary. We celebrated 9 years! Neither of us are super romantic but we both love food so I wanted to make something special. I had pork chops in the freezer and I knew exactly what to make with them. Fried pork chops! …
Cold Brew Coffee
I never have been much of a coffee drinker. Honestly, it never set well with me and I never really felt the need to have a caffeinated beverage. That was until our youngest was born. Oh boy! Having to run after our busy older daughter and then being sleep deprived from a newborn I felt the need. The need for caffeine! …
