This chicken broccoli lasagna was a recipe my mom came up with one day. She whipped it up for us during a visit and it was absolutely delicious so I obviously needed to get on here and share the recipe with everyone. My mom is the reason I love to cook. She inspired me so much growing up and she definitely has encouraged me through all of my kitchen experiments.
This is a very simple dish to make and it gets even easier if you already have some cooked shredded chicken on hand. That is what I used today and this thing went together so quick. Plus it was an excuse to make more homemade ricotta. 🙂
One thing I wanted to mention is that the meat/sauce mixture and even the cheese mixture will seem pretty thick but it turns out great that way. So don’t add more liquid, it just doesn’t need it.
Chicken Broccoli Lasagna
8 oz lasagna noodles (about 9 noodles)
1.5 lbs boneless skinless chicken breasts or thighs or 1 lb of cooked chopped chicken
3 c chopped fresh (see note)
2 T butter
3 T flour
1 c milk
½ c chicken stock
1 c sour cream
2 t Worcestershire sauce
salt and pepper to taste
1 1/2 c ricotta cheese
2 cups shredded mozzarella
½ c grated parmesan
1 t garlic powder
Bring a large pot of water up to boil and add in the lasagna noodles. Cook until al dente, ~10 min.
In another pot of water boil chicken until it has an internal temp of 160 degrees. Remove from water and let rest for 5 minutes before chopping.
Place chopped fresh broccoli in a microwave safe bowl with ¼ c water and cook on high for 3 minutes. Drain off the water.
In a small saucepan over medium heat melt the butter. Add flour to the melted butter and stir for 30 seconds. Add in milk and chicken stock. Stir until thick and bubbly then remove from heat then add sour cream, Worcestershire, and salt and pepper. Add in chopped chicken and broccoli.
In a small mixing bowl combine ricotta, mozzarella, parmesan, and garlic powder.
Preheat oven to 375 degrees. In a 9×13 dish spread ~ ¼ cup of sauce/meat mixture in the bottom. Layer noodles, sauce/meat, then cheese mixture to make 3 layers. Cover and bake in the oven for 35 minutes. Remove foil then broil until golden brown and bubbly on top then remove from oven.
Note: You can also use frozen broccoli. I prefer to use the kind that you steam in the bag if I am using frozen and I just cook on high for 5 minutes in the microwave.
