I am a total snacker. I feel like I am almost always up for eating something… Especially something a little sweet after I’ve had a savory dish. I always like to end on a sweet note! Is anyone else like that? I could be completely satisfied with a meal but then I just feel the need to end my meal with something sweet. So that is where these peanut butter chocolate chip granola bites come into play!
I don’t feel guilty eating one of these cute little bites. Partly because they are just cute little treats but also because they aren’t bad for you. They are also great in cold lunches. I pack a lunch for my husband every day and these little guys hold up great!
BTW this scooper is a nice tool to have when I’m forming all the little bites. Makes them all uniform and stuff 🙂
Peanut Butter Chocolate Chip Granola Bites
Ingredients
1 cup natural peanut butter (Adam’s or I use homemade)
1 cup honey
2 t vanilla
½ cup shredded coconut
½ cup ground flaxseed
3 cups quick cooking oats
1 cup Rice Krispies
½ cup mini chocolate chips
In a large mixing bowl combine the peanut butter, honey, and vanilla. Stir until well combined. Add in coconut, flaxseed, oats, Rice Krispies, and chocolate chips. Stir until everything is coated in the peanut butter mixture. Refrigerate for 30 minutes. Remove from fridge and form into balls. Store in an airtight container in the fridge. Makes 26 large bites
